These analyses enable producers to make real-time decisions during fermentation and aging, and CEM typically delivers routine results within 24 hours of sample receipt, with an optional sample collection and transport service available for clients who cannot deliver samples in person.

Beyond routine quality-control testing, CEM performs a full range of contaminant and residue analyses required for compliance with European food safety regulations. Specific tests include heavy metals (lead, cadmium, arsenic, copper, iron, and zinc), methanol, glycols, ochratoxin A (a regulated mycotoxin), biogenic amines (including histamine), pesticide residues, phthalates, and bisphenol A. The laboratory also tests for allergen-relevant substances such as casein (a milk-derived fining agent), egg albumin, and histamine — all subject to mandatory labeling obligations under EU Regulation 1169/2011 for wines placed on the European market. Ion profiling covering sulfates, chlorides, phosphates, nitrates, potassium, calcium, magnesium, sodium, and lithium provides geochemical fingerprinting data used for authenticity, origin, and adulteration assessments.
